Summer is upon us – and it’s time to introduce some fresh and delicious summer salads in our diet. Summertime cuisine immediately brings images of pink lemonade and yellow sorbets, fresh fruit like mangoes and watermelon…and crisp, cool salads!

1. Salmon-Cucumber Salad with Toasted Bread Bits

In this simple yet delicious preparation, smoky salmon is balanced against fresh English cucumbers.

Simply slice the cucumbers crosswise and toss them in a red wine vinegar dressing. Add flaked smoked salmon on top and serve with lightly toasted bread bits or croutons.

4. Raw Zucchini-Corn Salad

A simple lemon basil vinaigrette dressing turns this into a yummy salad that is chock-full of nutrients and takes less than 20 minutes to whip up!
