COOL ‘N EASY SUMMER TREATS

As temperatures soar, so does our longing for cool, sumptuous treats that are easy to make. And the emphasis here is the word ‘easy’.

All of these recipes, from IKEA, will focus on store-bought materials that can be worked on easily to create delicious eats. If you are a huge fan of making from scratch, then just add the baking to your prep time.

Strawberry Cheesecake

Ingredients:

Strawberries, 1 lb

Softened cream cheese, 4 oz

Powdered sugar, 1/4 cup

Vanilla extract, 1/4 tspn

Crushed Graham cracker

Method:
Slice off the tops of the strawberries and scoop out the pulp

  • Mix the cream cheese, powdered sugar, and vanilla thoroughly with a blender
  • Fill in each strawberry with the blended filling
  • Dip the strawberry, filling side down, into the Graham cracker crumbs
  • Keep refrigerated until served
  • Serve them the same day as the strawberries may get mushy if left too long.

Mango Lassi

Ingredients:

Diced fresh mango, 1 cup

Plain yogurt, 1 cup

Milk, 1/2 cup

Sugar, 2 tbsp

Slivered almonds, to sprinkle (optional)

Method:

  • Add all the ingredients and blend thoroughly
  • Puree until smooth
  • Serve in tall glasses with ice cubes

Rainbow Waffle Sandwiches

Ingredients:

Ready to eat waffles, 6

Vanilla ice cream, 2 pt

Multicoloured sprinkles

Method:
Warm up the waffles in a microwave

  • Layout 3 of the waffles, and spread the ice cream on them fully to the edges
  • Cover with remaining waffles
  • Coat edges in sprinkles
  • Freeze until firm (~ 4 hours-2 days)
  • Cut each waffle into 4 triangles just before serving
  • NB: If you are keen on cooking from scratch, add in the prep time for making waffles

Watermelon Ice Pops

Ingredients:

Seedless watermelon pulp, 5 cups

Sugar, ½ cup

Mini chocolate chips, ¼ cup

Softened lime sherbet, 1 pt

Method:

  • Puree watermelon and sugar in blender until smooth
  • Strain into a bowl. Cover and freeze for 2-3 hours
  • Remove from freezer when slushy, add chocolate chips and stir thoroughly
  • Place disposable cups in shallow pan and spoon watermelon puree into cups, leaving some space in cups. Place pan in freezer for 2 hours
  • Spread softened lime sherbet on top of each cup. Smoothen with back of spoon
  • Cover each cup with plastic wrap, cut a slit in the centre of each cup, insert a popsicle stick into each cup. Freeze overnight (1-2 days).

Take them out for a few minutes before serving, gently pull out from cups and serve.
